Yes, that’s ME. I amaze myself, I can boil real water, burn toast, I’m incredible.

My greatest feat is probably making coffee successfully each morning, but every once in awhile I think of some food I like and make an attempt at cooking it. Getting good recipes isn’t a problem now that we have the Internet, it’s following the instructions where things often fall down.

The garden is producing well now and the zucchinis started to accumulate faster than I care to eat them, so staring at them in the refrigerator a few days ago, Zucchini Bread came to me. I never had any but recalled hearing about it sometime in the distant past, and thought, “why not? I have to do something with it”, found a recipe on the Internet and after not making too bad of a mess in the kitchen, succeeded in baking two loaves of it.

It’s GOOD. Very yummy. Wow. Now what I didn’t eat that day is wrapped against freezer burn and tucked away in the freezer. With that success behind me, memories of a really excellent potato salad recipe prompted me to make some for tomorrow, the 4th of July, our Independence Day. So I did that yesterday and once again, it’s hard to stop eating the stuff. It’s the best potato salad I’ve ever had, anywhere.

So, today I was staring back at 3 rude bananas that were just laying there, doing nothing, and since the zucchini bread turned out so well, what would banana bread be like? That was this morning, and while the zucchini bread actually tastes better to me, the banana bread ain’t bad, at all. After gobbling up a couple fat slices of it, the rest is likewise freezer-wrapped and getting frosty.

Now is the time to cook, almost everything you bake requires eggs and the price of eggs has dropped from a high of $12 a dozen, yes, it maxed at a dollar an egg, down to, now, a dollar a dozen. Enjoy it while it lasts because it won’t for much longer and the next baking shortage coming is flour. Because of the drought. Which motivated me to order up an extra 25 pounds of flour.

By cooking more, I’m doing my bit to stay ahead of continually rising food prices that seem to keep going up faster than they ever used to. I’ll keep buying bread for now but the next time it jumps up again I’ll be baking it like I used to. Nothing tastes better than fresh baked bread and that’s a fact.
